Fresh From the Oven - Double Chocolate Scones

Another scone recipe from my Pinterest board...Double Chocolate Scones.  I must admit that I thought this would be my favorite out of the five I made, I mean it's chocolate, right?! However it is actually fifth on my list after trying them; yep, last. 😞 I may try the recipe again in a few weeks.  It might just be they didn't turn out as expected because I totally missed the coconut oil when I mixed the recipe, LOL.  I'm not sure how I missed it but I know I  did because I don't even have any in the house! So, tip for the day - if you make these be sure to add the coconut oil!  Mine did not rise - at all and they are very dry.  Putting them in the microwave for 10-15 seconds helps a little. And of course, not everyone agrees with me.  My husband and son think they're good, so...it may just be me after all.

To recap my "week of scones" I would say it's a tie between the Apple Pie and the Banana Chocolate Chip as my favorite. They are both so good!  Next would be the Snickerdoodle, then the Classic and finally the Double Chocolate.  That's just my opinion though, perhaps you'll give them a try and see what you think.

Fresh From the Oven - Gold Medal Classic Scones

This is a very simple scone, as suggested by it's name. 🙂 It's the perfect accompaniment to a hot cup of coffee or tea.  I like to freeze my scones, taking out just a couple at a time for a quick snack or to enjoy with my coffee.   I toss them in the microwave for 15 seconds or so and they taste like they just came out of the oven! Perfect!

Fresh From the Oven - Snickerdoodle Scones

The scone for the day - Snickerdoodle.  What's not to love about snickerdoodles, an all-time classic favorite?  The recipe calls for cinnamon chips however I opted to use the extra cinnamon.  These bake up very nicely and are quite good but mine seem more like coffee cake than snickerdoodles. I will probably make them again, using the cinnamon chips (if I can find them). Either way, they are delicious!

Fresh From the Oven - Banana Chocolate Chip Scones

Today's scone is the Banana Chocolate Chip Scone.  This one is also very good; not that there was ever any doubt!  How can you go wrong with bananas and chocolate, right? Again, an easy recipe to follow and simple to make, 12 minutes or so in the oven (I used my mini scone pan so adjusted baking time accordingly) and they're done - quick and so delicious! 🙂

Fresh From the Oven - Apple Pie Scones

I was on my Pinterest page the other day and my total pins caught my eye...almost 18,000 pins!  While I realize this is nothing compared to some pages, I found it a bit overwhelming.  One can really "get lost" in the world of Pinterest (at least this one can, LOL).  I think I'll go on for a couple of minutes and a couple of hours later I'm wondering where the time went! Surely I can't be the only one who experiences this, right?
So I decided I really need to start making some use of those pins to justify the time I have spent creating them. What better place to start than one of the FOOD boards?  I promised myself I would try at least ten items from one of these boards by the end of the month; the board I chose to start is SCONES.

I have been looking for a mini scone pan for a couple of years now but I just couldn't bring myself to spend the money.  Around Christmas time this past year my husband and I were in Bed, Bath and Beyond to get a cookie sheet (that's a story for another day) and I thought I would see if they had them as long as we were in there.  Well, as luck would have it I just happened to be in the right place at the right time!  I asked the sales person and she said they didn't have them in the store but she could probably order one for me. Not only did they have them on-line but they were on sale and the shipping was free - SCORE! 




My husband bought this Nordic Mini Scone pan for me.  This is the first time I have had the chance to use it.  Truth be told, it is probably more time consuming then the traditional method but I don't care... I love the pan.  I like the smaller size and I am able to make the scones more uniform in size this way. The pan is very easy to clean and as an added bonus it's made in the USA.  (BTW - I do not receive anything from Nordic for mentioning this pan. I'm quite confident they don't even know who I am 🙂.  I just really like the pan!)


The recipe I chose to start with is an Apple Pie Scone.  You can find the recipe at this link: http://www.alattefood.com/apple-pie-scones/ .  The recipe calls for maple syrup in the icing which I thought about substituting with cream, however I decided at the last minute to stick with the original recipe.  I'm glad I did!  There is just a hint of the maple flavoring and it perfectly compliments the taste of the scone. 

  

This recipe was a huge hit at my house...oh, so good! The recipe is easy to follow and is relatively quick to throw together.  I hope you get a chance to try it yourself - a definite winner!

Kitchen set donated for a local benefit.  The set included 2 discloths (knitted-patterns in previous posts) and 3 scrubbies (crocheted) made from nylon netting. The scrubbies are great for pots and pans or cleaning your veggies; of course you wouldn't want to use the same scrubbie for both. 🙂

This card is part of the Fairy Cottage SVG kit from svgcuts.com. I cut it using the Cricut Explore and then layered the pieces.  I added a half pearl to the gate frame for a door handle.


 



The card has a lattice door on the front that opens to reveal the greeting/message inside.
I need to go through my paper stash and find a pattern that better coordinates with the card but I really like this design.

Another masculine birthday card for February.  My son's birthday was February 19th.  This is the card I made for him.  I thought it was quite appropriate since we had just had a conversation about his having to work on my daughter-in-law's car and he just got a new job as manager of a car parts business!
I colored it using my Copic markers and hand cut a banner for the message, curling it and adhering it to the front of the card with pop-dots.

Another birthday card, this one for a teenage boy.  This card is different from what I usually do - no stamps or markers.  This was cut using my Cricut Explore and the Basketball cartridge.  I'm very pleased with the way it turned out.  The phrase "slam dunk" was cut and then layered.  I used the school colors for "slam."   I then cut out the basketball player and layered him on a cream background and placed him on the card using 3-D pop dots. The background of a basketball court is a sheet from my stash...perfect!

This is the second stamp from the House Mouse set "Mice Wishes."  This was an adult birthday card I colored with Copic markers. I used my Big Shot to cut the labels and tags and layered them.  No pop dots on this one but I did use a Wink of Stella to make the base around the nutshell shimmer.
